    the hub comes apart from the brake arm side, probably easier to take the guts out to get to the spokes than removing the cog from the driver.

    black would likely be too much of a contrast, I'd try something more subtle: a couple/few different shades of brown slightly darker than the current color, applied with a not-soaked dauber or airbrush then burnished. going slow. Tandy Leather has dyes and hi-lite stains that should do it.
