I have never removed a rear rim with a new departure 2 speed hub and I'm not sure the best way to disconnect the cable so that I can take the rim off and change the tire. Can anyone tell me the best technique to do this?

I bought this green Shelby about 5 years ago. It has 2 or 3 small spots where someone touched up the white stripes but other than the bars it looks pretty original. The badge says Flying Cloud. I welcome any thoughts about it as I have no clue as to year etc?..
