Finally riding a big boys bike
Which is best, I’m thinking of using a contact adhesive. Your suggestion please.

This worked well for me for attaching leather to pad. For padding to pan I used a brush on contact cement

That's what I use too. For the pad and the leather.
 
Use the spray adhesive. It can be pulled up and repositioned if needed. With contact cement, once the two surfaces have made contact, they are permanently in place.
