For just the cable, I've used universal speedometer cables from the auto parts store-

It's an easy and rewarding fix!
If the whole housing is gone there are some universal housing kits available- first one I found is pretty expensive:

But you could probably find one cheaper, or shorten a NOS car part. These are pretty common on eBay.
I'm not sure what to do if the drive on the front wheel is gone other than rob one off of another speedometer.
