Actually you can grind off every other tooth on some modern rear cogs and the spacing is close enough for the skip tooth chain to still engage without binding. You have to use a rear sprocket with an equal number of teeth, though. Back in my rat rod bike days I did this pretty often to use a modern wheelset with a skip tooth drive and never had any problems.
I think that answer is the "opposite" of what you are asking though!
