These bars are solid and appear to be hickory or elm wood. ( They are unfinished and could be stained and varnished to make them really pop! )
I gave them a quick, light sanding / polishing and left the grip ends rougher, to about 3-1/2 inches in from the end, for the grips to adhere to.
I also left the scratches, dents and cracks for that, original, aged patina look. They could be sanded out to remove these, if desired for a restored, immaculate appearance.
The diameter of the stem is .870 or 7/8 inch.
