Is there a date on the crank? With that high number H serial there is a chance this was an early 1942 built Defense model.

It is cast "H502" between the bearings with a little circle mark after that, is there somewhere else I should look on the cranks for a stamp or mark?

Cranks don’t always have a date. My H serial crank was not dated.

Is the paint dark green?
I was thinking it was a really dark green, but I have been told I am a bit color-blind so I showed it to my wife, and she said she thought it was a bit greenish too. They must have really slopped on the paint as I can see a run on the inside of the fork near the top. I am sure it is very dirty, oxidized and faded too.

I see dark green with gold pin stripes. It's going to look great when you get it all cleaned up. Here's some inspiration from @WillWork4Parts

Actually there is some bad rust on some parts of the rear seat stays below the seat and on a few other spots. I will have to take some of it down to bare metal, so at least some of the original paint is not going to survive.
