The price variations you see on these dies....there has to be a quality difference to justify. I'd rather think about taking a large hammer to things.

There are different types of semi-tubular hollow rivets made out of different materials. The oval head semi-tubular hollow rivets are the ones I use mostly. They come in different sizes and depths.

I've used these tools on leather projects also, I've used a friends Hanson on bicycle fender rivets for that OG appearance. If your doing multiple restorations the Hanson would be a nice tool to invest in, but if your doing minimal work the tubular rivet peening setting tool "splash anvil" is all you will need. Quality is the difference between these tools, buy the better quality tubular rivet setter splash tool.
There's also a Pintonka rivet tool kit that's a nice set-up. Perfect for mounting in your vise.
