Could you tell me what the dimensions of the rims are for these, width and diameter?

I'm using 26" Worksman wheels. U can use 2.25 up to 3" wide tires. 26" heavy spoke wheels will work 12ga. spokes for stability.

26" rims. Use heavy duty wheels like Worksman and get the drum brake wheel for the rear of the Simplex.

Thanks for posting the parts list. I'd never seen his formal price list. Glad Wayne is still doing his thing. Got everything I ever needed from him a few years back. Great guy! I'm an old school kinda guy and it refreshing to deal with other old school guys like Wayne.
